Also called kurkum (Arabic), curcuma (Europe) and haldi (India), sometimes referred to as “golden spice (saffron)”
Alleppey turmeric is produced in Kerala, India and is traded mostly in the Alleppey district (hence its name). It has a rich and earthy flavor, a slightly bitter taste, and more pungent than madras turmeric. It has a darker (deep yellow) color and the texture is ‘oily’ due to its very high curcumin (the coloring agent) content (5%-6.5%), and is one of the best to make Indian dishes.
Suggested Uses:
Turmeric is an intrinsic part of most Indian cooking. From curries to dals, soups and sabzi (vegetables) and meat dishes. Alleppy turmeric is the best one to use in curries, it gives warm yellow color and is closest in flavor and aroma of fresh turmeric root.
Due to its oily texture it can also be used as an effective coloring agent.
