Indian Cinnamon (Cassia), also known as ‘Dal Chini/ Daruchini’, is the inner aromatic
bark of a South Asian evergreen tree. It has a thick and a rough texture, and has
a stronger and sweeter flavor than Ceylon cinnamon bark.
Indian cassia cinnamon is aromatic, has a very strong and spicy-sweet flavor.
It has 1.5-2.5% cinnamon oil content.
Suggested Uses:
Indian Cinnamon is one of the more common spice and flavoring agents in the spice
blends of India. Indian (Desi) Cinnamon sticks, whole or ground, are used in Indian dishes like curries, rice & meat dishes, desserts, rice pudding, sweet pastries and hot drinks.
