CINNAMON (CASSIA) POWDER
(Cinnamomum aromaticum or Cinnamomum cassia)
In Chinese, it is known as 'ròu guì' Chinese Cassia Cinnamon powder is the ground aromatic dried thick scroll-like bark of the evergreen Cassia tree, in the laurel family, native to South-Eastern China.
It has a pungent fragrance, much stronger than the other cassia cinnamon, and has intense
spicy- sweetness with a hint of bitterness.
It has 3-4% volatile oil content.
Suggested Uses:
Used in dishes that have a more complex flavor, adds spicy sweetness to a dish. Chinese cinnamon is a great addition to braises, stir-fries, and stews. Chinese cinnamon is also one of the main ingredients in Chinese Five Spice Powder.
Health Benefits:
Cassia Cinnamon is used as a digestive, carminative and stimulant tonic. Coumarin is a toxic compound significantly found in Cassia, which has a negative impact on the liver and kidney.
