Chinese Black Rice
Also known as
Emperor's Rice, is a glutinous medium-grain rice which turns a silky dark indigo color when cooked. It has a rich, sweet flavor and a satisfyingly chewy texture.
Traditionally used in desserts, making rice puddings, rice molds and rice balls. Also used for salads or simple side dish
Cooking Instructions for plain rice:
- In a sauce pan add 1 3/4cup of water/ Cup of washed & rinsed rice, add pinch of salt to taste (optional)
- Stir lightly, bring to a rolling boil, lower the heat, cover with lid and simmer for 25-30 minutes or until rice is soft yet chewy.
- Turn off the heat, let the rice steamed in the covered pot at least another 5-10 minutes or until the rice has absorbed the liquid.
- Fluff the rice with a fork and serve hot.
One cup of rice will yield: 2 ½ cup of cooked rice.
