Pilpelchuma, also called ‘pilpelshuma’ or maseer, is a popular Libyan garlicky hot pepper sauce, mostly used as a condiment and as an ingredient in Lybian foods including ‘shakshouka’.It adds vibrant, spicy flavor to vegetables, sauces and meats.
Can be rehydrated with water to make a smooth, spicy chili paste and serves as a condiment.
Ingredients:
Ancho Chili, Cayenne, Sweet Paprika, Cumin, Caraway, Garlic, Salt, Lemon Powder.
Simple recipe to make Shakshuka:
In a large sauce pan heat 1tbsp olive oil, add ½ diced onion, 2 minced garlic cloves, 1 diced green or red bell pepper, cook until soft. Add 2 tbsp ‘Pilpelchuma’, 2tbsp tomato paste. Add 4 cup chopped tomato, stir to mix well and simmer over medium heat until the sauce thickens. Add salt and pepper to taste, may add more cayenne pepper to make it spicier and pinch of sugar to balance theheat. Gently crack 5-6 eggs, one at a time over the sauce, spacing in between. Let simmer until eggs whites are set. Remove from heat, garnish with chopped parsley. Serve with pita and yogurt salad.
