Rajgira Flour is ground seeds of Amaranth plant, has pleasant and nutty taste. It contains no gluten, has high level of protein and fiber.
Rajgira flour is made into flat breads, including thick, leavened dosa and thinner unleavened pancakes. Also used in the preparation of cookies, crackers and backing mixes.
One part amaranth flour to 3-4 parts wheat or other grain flours may be used.
