JOB'S TEARS,
AKA 'Coix seeds, Chinese Pearl Barley'
Job’s Tears are the seeds of a lovely perennial grass native to SE Asia. This delicious and edible seeds are hulled and polished to a grayish-white teardrop shaped barley grain. This gluten-free grain, has nutty- sweet bland taste and slightly cool properties. It is a rich source of dietary fiber, low in fat and calories, and a nutritious and healthy food choice.
It is normally used for food, delicious dessert drink or daytime snack, or added in soy milk. Also use in place of rice in stir-frys, soups, salads and stuffing.
Boil 4 cups water and add 1 cup Job's Tears. Cover and reduce heat, simmering until tender, about 50 minutes. Drain excess water.
