.Kawati is a traditional Nepalese mixed bean soup is made from mixed beans & peas (red kidney beans, black-eyed beans, chickpeas, black chickpeas, mung bean, moth bean, black gram, yellow peas, pigeon peas), eaten as a delicacy or ritual significance.
Cooking Instruction: Wash, soak 2cups beans in water 3-4 days or until they have sprouted. Drain, add 5cups water, bring to boil. Simmer for 60-90min or until tender (add water as needed). Whisk lightly, remove floating foam. Flavor with butter or oil, salt to taste & spices (cumin, black mustard, fennel and ajwain seeds). Simmer uncovered until desired consistency & Serve.
