Urad dal is a skinless creamy white (Ivory) split Urad lentil / Black Gram, rich in dietary fiber, protein and B-complex vitamins. Ground into flour or paste, and extensively used in South Indian batter for dosa, idli, vada and papad.
A simple, healthy and wholesome dal is prepared from Urad dal, usually thicker than any other dals. Eaten with warm rotis or paratha, or as an entrée.
Basic Cooking Instruction: Wash, rinse, soak lightly & drain. Add 2-3cups of water/ cup of dal,bring to boil. Lower the heat, simmer 20-30minutes or until tender & soft (add more water as needed). Whisk lightly, remove the floating foam.
Flavor with butter or oil, salt to taste and dal masala seasoning if desired. Cook uncovered over low heat until desired consistency. Serve warm with steamed basmati rice, flat bread and choice of any veggie.
