Blue cornmeal is coarsely stone ground blue corn kernels. Blue Corn contains 20% more
protein than white or yellow corn. It has a sweet, intense flavor and a hearty, fine texture,
ideal for cornbread, porridge, stuffing, hot cereal, or as a breading for poultry and
fish, blue pancakes, waffles and even cookies
It works also blended with other cornmeal for baking.
Substitute Blue Cornmeal for 1/3 of the wheat flour. Sift cornmeal before adding to recipes, to remove any clumps & make mixing easier and a smoother batter.
