Medium Cornmeal is medium grain ground from whole grain yellow corn, retains some of the hull and germ. Gives an intense corn flavor and providing a great texture without an over abundance of crumbs. Cooks quickly & cooks faster than coarse ground.
Used in pretty much the same places as fine-ground, for a little more texture,a little more fiber, flavor and nutrition.
Used in traditional corn bread, polenta, pudding, tortillas, pan cakes, or porridge.
