This whole Yellow Corn kernel is a variety of maize or corn with a high soft starch content, rich in fiber and many vitamins, minerals, and antioxidants.Used extensively in the Hispanic food service. Grind corn in a mill for fresh cornmeal,or cook whole corn to make fresh masa (corn dough) for delicious homemade tortillas and tamales.
Basic Preparation: Soak 1 cup dried corn in 2 cups water for at least 2 hours or overnight. Do not drain. Cover and bring to a boil. Reduce heat to simmer and cook 60 minutes until tender. Store in a dry and cool place.
