Whipped Cream / Chantilly Stabilizer is a tasteless and odorless powder designed to prevent serum separation in whipped cream.
Adds lightness and smoothness and holds its body and fresh texture longer, prevents whipped cream from loss of moisture, cracking, loss of volume and discoloration. Higher the fat content of the cream, the stiffer the whipped product can become.
Use 2tsp(approx.) whipped cream stabilizer for every 34 oz of heavy cream. For sweetened whipped cream: combine stabilizer with sugar prior to adding.
