Calcium carbonate is used in bakery products as a yeast nutrient, dough conditioners and leavener. Can improve crust appearance, color and enhance nutritional value. Also used as an anti-lumping or anti-caking of seasoning and spice.
Preservative and color retainer in fruits and as a stabilizer to dairy products. Usually added to the dry ingredients at 0.1% to 0.5% (baker's percent).
It can also be used as an acidity regulator with the doctor's consent.
