Iota-Carrageenan are refined hydrocolloid extracted from specific red seaweed (algae). Used as a suspending and emulsifying stabilizer, thickener, binder and gelling agent in molecular gastronomy.
It forms a stable soft & elastic gel with calcium salts for freeze/thaw purposes.
Usually used in water applications where a weak cohesive and elastic gel is required.
Iota Carrageenan thickens at 0.02%-1% concentrations and gels from 1%-1.5%.
