Paddy Straw Mushrooms are cultivated on rice
straw in Southeast Asia. These small, plump
mushrooms have a cone-shaped cap that is
dark gray near the center and lightens toward
the edge. Harvested young and unpeeled, have
a more pronounced flavor than the canned
version. Dried mushroom have more intense
flavor, texture is meaty and firm. Excellent in a
wide range of Asian dishes, stir-fries, and noodle
dishes with chicken or shrimp, as well as in
soups and stews.
Reconstitute: Rinse throughly and soak in
boiling water for 15-20 min, drain. Or, rinse and
add directly to any recipe that will cook for at
least 25 minutes.
