Shiitake mushroom, (Lentinula edodes), edible
wood-dwelling fungus, native to East Asia. They
are larger than button mushrooms, with an
umbrella-shaped cap. Described as umami,
prized for their deep, earthy fragrance and rich
savoriness. When rehydrated, they have a more
intense flavorand a meatier, chewier texture
than fresh mushrooms.
To rehydrate : Put desired amount in a bowl,
and cover with boiling water, soak for 15 to 20
min. rinse well.
