These often neglected and rarely seen small,
slender brown mushrooms up to 3" across,
with a slender, usually hollow stem, colored
yellow at the base found in Cascades and on the
coast. They taste exquisite and are versatile.
Its flavor and silken texture, is especially good
braised with meat. Grind these mushrooms
into a powder and add to soups, stews, gravies,
braises and sauces.
To Reconstitute: Rinse and soak in boiling
water for 10-15 min, drain and rinse. Strain
through a paper towel or coffee filter and retain
liquid for future recipes.
