Black Trumpet, Mushroom
These fragile, trumpet-shaped mushrooms grow in clusters in damp woodlands, especially forests that contain beech and oak trees, highly prized for their potent, sweet aroma, offer rich, buttery flavors and sweet fragrance that is often described as "woodsy".
Rinse well before using (they are often sandy). Reconstitute (soak in boiling water for 15-20 min or until softened). May be added in recipes without rehydrating, that will be cooked for at least 25 min. It adds a great woodsy flavor to roast meats and poultry. Add extra dimension to mellow butter-based sauces to heighten their rich, buttery flavor.
