Alligator pepper is seed pod of West African
spice, that contains many small brownish
seeds with sharp peppery, bitter, pungent
and aromatic flavor.
Whole seed pods are pounded in a pestle and
mortar prior to adding to foods, also crush
the seeds to release the most wonderful
combination of flavor notes.
It imparts both pungency and a spicy aroma
to soups and stews, and various rice dishes.
