Demerara sugar
Demerara is an English version of turbinado sugar, but more sticker. Produced by extracting sugar cane juice, boiled to produce a dark syrup, then spun in a centrifuge to separate the crystals from the molasses, then washed to remove all but a trace amount of molasses, until these light golden brown, large, coarse, irregular crystals flow freely and don't clump together.
Demerara sugar is sweet, with a slight flavor of caramel. Will not melt or dissolve during baking, making it an excellent garnishing sugar.
It adds sparkle and crunch to all kinds of baked goods.Rolled onto the cookies for a sweet, crunchy coating. It is also an excellent sweetener forhot drinks, such as coffee and tea.
