Indonesian Coconut Palm Sugar
AKA 'Javanese Sugar, Gula Merah (Red Sugar), Gula Melaka (Malaysia)'
Gula Jawa is produced by tapping and boiling the sap of flowers from coconut palm trees
into a thick, dark syrup, and then crystallising into moulded cakes and finely crushed into
a granular texture. It taste is like a caramel- flavored brown sugar, but lighter, without any
aftertaste. Gives a complex, full-bodied richness, earthy aroma and deep sweetness
with an added tinge of smoky flavor.
Gula Djawa is more nutritious than sugrcane sugar, melts easily. Used in many Indonesian,
Malay and Javanese traditional dishes and desserts.
