Jaggery (Gur) is non-centrifugal cane sugar, where sugarcane is crushed to the juice, which is then filtered and boiled in a shallow iron pansfor concentration (without separation of the molasses and crystals) then cooled. Rubbing the concentrated juice with wooden scrappers, and then solidifying the granules, then put them into cubical molds to form Jaggery cubes.
It contains 70% sucrose, less than 10% glucose & fructose, 5% minerals & less than 10% moisture, and retains more nutrients compared to refined sugar.
Jaggery’s taste is more complex, with hints of caramel, and the color is due to molasses. Jaggery is used as an ingredient in Indian Sweets and Savory Dishes.
