Hijiki is a brown sea vegetable growing wild on rocky coastlines around Japan, Korea, and China. Hijiki is very high in fiber, has a rich, bitter-sweet flavor and firm, al dente texture after soaking usually used as a topping for many Japanese dishes to make sushi, soup, and spring rolls. Soak hijiki in cold water for 30 minutes before using.
