Baharat
AKA' Middle Eastern -7 Spice Blend'
Baharat (Arabic for “spice), is a warming blend of fragrant, traditional combination of sweet, earthy, aromatic and warm spices without being too spicy or overpowering. Use the blend as dry-rub for grilled/baked meat (specially for lamb), poultry or fish, or add to casseroles for a Middle Eastern twist, add it to rice dishes like pilaf and biryani, or as a unique flavor enhancer for dips, spreads, sauces, stews, soups, and roasted vegetables.
Add 1-2 tbsp blend /lb meat, To shape the flavour, may add chilli if desired.
Ingredients: Black Pepper, Cumin Powder, Coriander, Cinnamon, Clove, Nutmeg, Cardamom.
Recipe for Middle Eastern Grilled Chicken Thigh:
Sprinkle both sides of 6 skinless chicken thigh with kosher salt, then rub 2 tablespoon of Baharat spice mix on both sides, keep aside. Heat 2 Tablespoon olive oil in a large skillet over medium high heat, sear the chicken in hot oil for 3- 4 minutes, turn over and sear other side on medium heat for 3-4 minutes until golden and crispy. Place the skillet in the preheated oven at 400F, uncovered, and baked until cooked through, about 15- 20 minutes. Remove from the oven and let rest 5 minutes before serving.
