Thai Yellow curry powder is the Thai version of Indian yellow curry, creates a mild yet flavorful Thai curry with a sweet and mellow flavor, and distinct Thai taste. It gives the bright yellow color as it contains a high amount of turmeric. Mostly used in Thai cuisines for light meats like poultry, seafood and vegetarian dishes.

Simple Recipe for Thai yellow Chicken Curry: Mix Shrimp Paste with Curry powder (1tsp shrimp paste for each1tbsp curry powder) and enough water or fish sauce, and make a paste like consistency. Stir fry 4tbsp this prepared Curry Paste in 1tbsp oil, add 1 cup coconut milk, mix and bring to boil. Add 1lb meat (cut in pieces), stir and add 1 more cup of coconut milk, bring to boil. Add 1 cup vegetables of your choice, stir and cook until meat are soft and tender. Add 1/2tsp brown sugar and salt to taste. Garnish with chopped fresh Thai basil and serve.
