Recipe to make a tender and moist Meatloaf: In a sauce pan cook 1 chopped onion and 1 chopped carrot with ½ cup beef broth until soft. In a large bowl, beat the 2 eggs, and stir in ½ cup bread crumbs, 2tsp meatloaf seasoning and 1/2cup milk. Let stand for 5 minutes to moisten the crumbs. Lightly mix in the 1lb ground turkey, 1lb ground beef and the cooked onion and carrot, until thoroughly combined. Place the mixture into a 9x5-inch loaf pan. In a bowl, mix the ½ cup tomato soup, 1tbsp balsamic vinegar, and 1/2tsp Dijon mustard together, and spread the mixture over the meat loaf. Bake meatloaf in the preheated oven until firm and center of the meat loaf should read at least 160 °F. After removing the meatloaf from the oven, let it rest for 5 minutes before cutting and serving.
