Palak (Saag) paneer is a very popular Indian vegetarian gravy dish consisting of puréed Palak (spinach) or Saag (mustard green leaf) and paneer (Indian cheese), seasoned with ‘Palak (Saag) Paneer spice mix’, makes this special creamy dish with full of flavor.
Ingredients: Cumin, Coriander, Turmeric, Red Chili Powder. Suggested recipe to prepare Palak paneer: Clean & wash 2 bunch of fresh spinach, blanch in salted boiling water for 2 minutes, then cool in a bowl of cold water. Squeeze excess water and grind along with 1tbsp sliced green chili (opt), to a smooth paste, keep aside. Heat 1tbsp of ghee/oil in a pan and sauté 8oz Paneer cubes till brown, put in a bowl of cold water, let sit for 5 minutes. Squeeze out the water, lay in a flat towel. In the pan add 2tbsp ghee/oil, add 1tsp garlic paste, 2tsp ginger paste and ½ cup finely chopped onion, stir-fry until brown, add 2tsp ‘Palak paneer spice mix’, add 1 cup tomato puree, and Spinach Paste, sauté for 2-3 minutes. Add ½-3/4 cup Sour Cream or Half and Half, 2-3tbsp ground almond/cashew, add little water if needed, stir and bring to boil. Add the browned paneer cubes, sprinkle 1/2tsp ‘Garam Masala (opt), mix and simmer for 1-2 minute, take off heat. Garnish with lemon wedge, serve warm with hot Nan bread or steaming basmati rice.
