. ... The ‘Panch Phoran’ Masala, is a traditional Bengali spice mix used in seasoning or tempering (Tadka/Tarka) dal/lentil, vegetable, fish or meat dishes. It lends an authentic flavor & lovely aroma when added to a dish. Ingredients: Cumin, Fennel, Mustard, Fenugreek, Kalunji (Nigella).
To use panch phoron: In a pan fry a little spice mix in oil or ghee until seeds starts crackling or "pop" — this releases the aroma and sweet flavor, add immediately the vegetables or meat to the pan, or simply toss into the Vegetables (especially potatoes), dal / lentil, meat or fish dishes. Panch Phoron mix is also can be used as a rub for meats, or for pickling vegetables. Recipe of mixed vegetable dish with Panch Phoran: In a pan, heat 2-3tbsp oil and add 2tbsp Panch phoron. Once they splutter, add 2 medium size chopped onion, 3-4 sliced green chilly, 4-5 pcs curry leaves, sauté for 2-3 minutes. Add 1tsp turmeric powder, 1tbsp ginger & garlic paste, stir for a minute. Add 2 peeled and cubed potato, 1/2 cauliflower, cut to medium size floret, 2 cup chopped pumpkin, 1 medium eggplant cut in cubes. Mix well. Pour a dash of water and cover with a tight lid and let it simmer on a low heat for 15 mins. Remove the lid, add salt to taste, turn the heat to a high and mix well for 10 more mins so it get little brown and the vegetables are tender. Garnish with chopped fresh coriander, and serve warm with rice or flat bread.
