Suya
Nigerian Spice Mix
Suya is an African grilled appetizer meat, a popular and delicious Nigerian street food snack, originated in northern Nigeria and Niger.
Ingredients:
ROASTED PEANUT, GINGER, CAYENNE, PAPRIKA, ONION, GARLIC, SEA SALT.
Recipe to make Suya spiced grilled meat:
To make marinade: In a mortar& pestle grind 10 seedless Uda pods, put in a large bowl and mix in 3tbsp seasoning mix. In a blender blend 1 chopped red onion, 4 cloves garlic, 1 small piece ginger, 1small green chili, 1 spring onion, and add it to seasoning bowl. Add 1kg finely sliced beef fillet and marinade in the fridge for 2-3hours.
To Grill: Thread 4-5 slices of marinated meat into each well soaked wooden skewers. Drizzle the skewers with a little olive oil, and place them on a medium preheated griddle pan, and griddle for few minutes turning regularly (2-3 minutes) or until golden brown and the meat istender. Serve in a plate with a squeeze of lemon juice, a drizzle of extra virgin olive oil and salt and pepper to taste, and lettuce cucumber and tomato salad.
