Cassia Buds

Cassia buds are the tiny, unopened flower buds of an evergreen cassia (cinnamon) tree of
the laurel family. They are picked just before blooming and dried in the sun. They taste like peppery, have a warm, delicate musky floral flavor, mild aromatic and has distinctive sweetness associated with cassia cinnamon.
Suggested Uses:
Cassia buds are finely ground to release their fragrance and used to enhance both savory
and sweet dishes. Also incorporate them into various desserts. Cassia buds can be used as
a tempering spice, in pickling recipes, stewed fruits, in tea blends, in spicy marinades for
meats in baking and slow cooking.
