Kachri Powder
(Cucumis Pubescens)
AKA ‘ Bitter Wild Cucumber / Melon'
The kachri powder is made from kachra/ Kaachar - a dried wild melon (a variety of
cucumber) grows wild in the Indian desert area of western India. Kachri powder has a
tangy, sour taste, acts as good natural meat tenderizer. And also is a great substitute of
amchur - Dried mango powder. Kachri powder is used extensively in rural Rajasthani and Gujarati cuisine.
Suggested Uses:
It gives a tangy taste to kebabs and add a unique taste and aroma to dishes such as curries, soups and salads. Kachri Powder is also used in preparing pickle and chutney.
Kachri powder is used in the marinating minced lamb, beef or chicken meat, acts as a tenderiser in dry meat preparations.
( Use-2-3tbsp/lb of meat).
