Local farmers make cut in the flowering stalks of Palmyra palm trees (Borassus flabellifer) to collect the sap. This sap is then boiled until a thick syrup. The syrup is further concentrated, cooled, and solidified into solid blocks of palm sugar and then granulated.
Palmyra palm sugar offers a delightful caramel-like sweetness, earthy undertones, and subtle nutty butterscotch notes.
