To prepare Couscous (Soaking Process): Put 1 1/4 cups water, 1 tbsp olive oil and salt to taste, bring it to a boil over high heat. Stir in 1 cup couscous, cover, and remove from the heat. Let it rest, covered, until the couscous absorbs the water, 5-10 minutes. Fluff it with a fork and serve.
