Lotus roots are sun dried roots of water lily (Lotus Flower), grows under water. Most commonly used in cooking, especially popular in Asian vegetarian cuisine.
The lotus root is mild tasting with a pleasantly sweet flavor, low in calories, high in dietary fiber and a good food source for energy.
When cooked it becomes softer but still retains a tender bite like cooked potatoes.
To Use: Soak for 2 hours, then drain & slice thin for stir frying or sliced into small pieces for soups & stews or added to other vegetables.
