Also called "kurkum (Arabic), curcuma (Europe), haldi (India), sometimes referred to as “golden spice (saffron)”
Madras turmeric is grown in Maharastra /Tamil Nadu, India and is traded mostly in Madras
district (hence it's name). It is most common Turmeric, has distinctive flavor, milder than
Alleppey turmeric, slightly aromatic & bitter taste. When ground it has bright yellow color
with a Curcumin (the coloring agent) level of 3.5% and generally used when color is sought
without much characteristic flavor.
To make Turmeric Powder: Boil the roots until soft, then peel & cut into pieces and dehydrate to be able to grind into a powder. Sieve several times to remove any fibrous bits.
Suggested Uses: Madras turmeric is Widely used in Indian, Asian & Middle Eastern spice blends, pickles, curry powder and pastes, or added to smoothies.
