Zereshk is the Persian name for the dried fruit Barberry. It is edible, refreshing, but sharply acidic berries, used in cooking for their pleasantly acidic taste and fruity aroma. Widely used in Persian, Iranian & Afgani cooking, as a flavoring for soups, rice dishes, stuffing & chicken dishes.
Soak barberries in cold water for 10 minutes before use. Drain, and sauté in a little oil until they swell.
