Fava (Broad) Bean are a flat, oval, large green bean, staple of the Eastern Mediterranean diet. Peeled & split fava beans (habas) are dried Fava beans with its outer skin removed, and have a creamy pale yellow color.
When cooked has bold, earthy flavor, creamy, buttery taste and granular texture. Peeled fava beans are good in soups, dips, salads, pastas
and stews. Also ground to make Falafal balls and roasted to make snacks.
Basic preparation: Wash, rise & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil.Reduce heat and simmer covered for 60-75 minutes or until tender (add more water as needed). Whisk lightly, remove the floating foam.
Flavor with butter or oil, salt to taste and any seasoning if desired. Cook uncovered over low heat until desired consistency.
Yield: 3 cups of cooked beans / Cup of dry bean
