These green olive colored Fennel Seeds are known as ‘Lucknow Sauf”, grown primarily in Lucknow, India. These are smaller, crunchier, and much sweeter than regular fennel seeds. Has verygrassy taste, sweet anise flavor with licorice overtones.
Lucknow Fennel seed’s sweet flavor is a common practice to use for pastries, yogurts, honey, fruits, young cheeses, or salads. Grind it with some sugar and make sugar cookies with them. These seeds are also chewed plain as a mouth freshener or digestive.
