Gellan gum is a hydrocolloid from the microorganism Sphingomonas elodea, used as a thickener, emulsifier, and stabilizer.
Gellan Gum LT100 is fine mesh, high acyl gellan, which forms soft, elastic, non-brittle gels that have a higher viscosity and “creamy” mouthfeel.
It soluble in hot water and has a set temperature of 70 – 80C (158 – 176F). It is thermo-reversible and will remelt after setting. if heat is reapplied.
High-acyl gellan is freeze/thaw-stable.
