Also called Dinka, Gund is an “edible gum” a resin that is extracted from the bark of the Indian Babool tree, available in crystal form, and is a natural edible gum.
It is a popular ingredient in Indian and Mediterranean cuisine. In India it is extensively fried and powdered and used to make sweets.
It provides heat to the body and is usually eaten in cold winter months. Also is used in making panjiri dish, mixed with whole-wheat flour, nuts, gum crystals, and sugar, fried in ghee. Panjiri is known to be beneficial for pregnant ladies at it strengthens back bone.
