This rich and spicy Pickle masala (Achar Masala), is an assortment of Indian aromatic spices, used to make mouth-watering homemade Indian pickles, that enhances the tastes and increases the satisfaction of every meal.
Pickle masala is used to prepare pickle with either green mango, lime, green or red chili, garlic, ginger, vegetables such as carrots, cauliflower, turnip or an assortment of some of them.
Chili, Mustard, Turmeric, Fenugreek, Salt, Paprika, Compounded Asafoetida (Hing powder).
Simple recipe to make Mango Pickle:
Wash & Cut 3 small or 1 large green mango, remove stone and dice into small cubes. Put the diced mango in a bowl, add 2tbsp Pickle masala and 2tbsp mustard oil. Mix well. Transfer into a sterilized jar, cover with a clean cloth and leave out in the sun or in warm, light place. Shake the bottle/mixture with a dry spoon once per day. Pickle will be ready about in 10 days. Serve with any dish such as snacks, rice, roti, poori bread etc.
