Simple recipe to prepare Saffron Pulao/ Pilaf Rice:
In 2 quart saucepan, heat oil 2tbsp ghee/ oil on medium high heat. Fry 1 small chopped onion until brown. Add 1½tsp spice mix and stir fry for 3-5 seconds, discard the whole spices (opt). Add 1cup washed and rinsed basmati rice and 2 cups of water, salt to taste, cover. Bring to boil, reduce heat and simmer until rice is fully cooked and water is absorbed. Off the heat, sprinkle some toasted almond and fried onion on the top of the rice, let rice stand covered for 5-10 minutes. Fluff the rice with fork and serve.
