Trinidad Curry powder is the Caribbean style curry powder, is very popular in Trinidad and used in every possible food from meats to vegetables and fruits. Trinidad curry powders tend to be a bit mild (due to the lack of hot chilies). Hot pepper sauces are often used to “spice up” Trinidadian dishes.
Ingredients: Turmeric, Black pepper, Coriander, Cumin, Ginger, Nutmeg, Cinnamon, Cardamom and Allspice.
Recipe to make Trinidadian Chicken Curry: In a food processor pulse 1 chopped onion,1 small piece of grated ginger, 4 garlic cloves and 1/2cup chopped cilantro. Then mix in 2-3tbsp curry powder, pulse again to make a smooth paste. Rub the paste on 10-12 pieces cleaned and washed chicken thighs, cover and refrigerate for an hour. In a cooking pot heat 3-4tbsp cooking oil, add the marinated chicken pieces, cook on medium heat until chicken pieces are browned. Add ½ cup of water, salt to taste, stir and simmer for 40-45 minutes or until chickens are cooked and tender. (May add water while simmering if needed). Garnished with chopped cilantro and serve with rice or roti and hot sauce.
