These Superior Extra Large ‘Pasilla de Oaxaca’ cultivated in the Mixe region of Mexico. Fresh Pasilla de Oaxaca chiles change from bright green to almost black-deep red when ripen. These medium-hot chilies are then harvested and roasted on wood for several days and dried.
These chilies get medium heat level and pure sharp-strong smoky chracter,
wonderful sweet aroma and pungent fruity flavor. These chilies are significantly hotter than traditional Pasilla.
Traditionally used in Oaxacan moles, latin-style bean dishes, vegetable dishes,
salsas, sauces, soups and marinades.
