I should say up front that I typically have little use for honey. My wife could probably start up shop with the variety of honeys on hand and I don't particularly care for any of them. However I'm not saying they are bad.
But..........BUT then there is RATA honey. I love it. Many years ago I got a jar of Airborne Rata Honey and it blew me away. Tasted like no other I have ever had , smooth, sweet, laid back, no bitter note - just wonderful. At that time Airborne offered it in creamed format and I'm sorry they currently don't, but the great taste is the same as ever. It seems this is a fairly rare product. The bees only produce it every other year in a relatively small area on NZ's south island.
As a footnote, I had the remnants of that jar bought perhaps five decades ago. The color had turned a dark brown and the little that was left had turned very stiff. The taste, hard to believe, was as good as ever. Also preposterously, there is a sticker on the cap: "Grocery $2.09" !! Gimme :-)
