Scotch Bonnet is a cultivar of the habanero, mostly grown in Jamaica. The flavor is fruity and sweet, with a hint of citrus, slightly sweeter and tropically fruity flavor than Habaneros.
Scotch bonnet's sweet, tropical flavor pairs perfectly well with Caribean island tastes. Often used in spicy jerk seasoning that are rubbed onmeats, fish, poultry or tofu beforegrilling. Used in dishes such as curries, soups and stews, or to add heat and flavor to chutneys, relishes, and dips. Also to make the famous Caribbean or West Indian pepper sauces & marinades.
To rehydrate: Rinse dried Scotch bonnets & let sit in hot water for 10 min., add whole or chop before adding to a recipe.
