Recipe to cook Southwestern style Chili Con Carne: In a large saucepan heat 3-4tbsp oil, cook 1 chopped onion until soft. Add 2lbs lean ground beef, and cook until browned. Stir in 4cup tomato juice, 1tsp minced garlic, and 1 cup tomato paste, mix well. Add 3-4tbsp seasoning mix, Stir well. Bring to a boil, cover, and simmer for 90 minutes, stirring occasionally. Stir in 1 can drained kidney beans, add water or tomato juice (if required) and salt & pepper to taste. Simmer, uncovered, for 15-20 minutes or until the sauce slightly thickened, stirring occasionally. Add salt & pepper to taste & garnish with shredded mozzarella cheese & green onion, and serve.
