Soy lecithin is extracted from soybeans, composed of choline, fatty acids, glycerol, glycolipids, phospholipids, phosphoric acid triglycerides and contains very little soy protein.
Lecithin is a food additive, is often used as an emulsifier, thickener, stabilizer, moisturizer, and mild preservative. It helps to improve moisture and texture in a variety of baked goods including breads and cookies.
Use 1tbsp granules per every pound of dough.
Lecithin granules can be mixed with any foods and consumed as a nutritional dietary supplement. It has a mild nutty flavor.
