To make fresh green sauce:
In a blender combine 1 cup chopped fresh mint, 1/2 cup chopped green chili, 1 cup fresh chopped coriander (cilantro), 1tbsp ginger & garlic paste, 1tsp salt, ¼ cup lime juice, 1/4 cup yogurt, and 2tbsp ‘Green Masala Spice Mix’, and puree until smooth.
Recipe to make Chicken curry with green masala:
Pour over 8 pcs skinless chicken legs in a bowl add green sauce marinade, mix well, cover and refrigerate for at least 2 hours.
In a large deep skillet heat 2tbsp oil add 1 finely chopped onion, stir-fry until translucent, add 2tbsp ‘green masala spice mix’, stir, may add water, add marinated chicken pieces along with the marinade sauce, stir, bring to boil, cover, simmer over low heat until chicken is tender. Serve with steaming basmati rice
